My Favorite Things || Vegan Winter Essentials + Chai Latte Recipe

Hello! The past weeks in New England have been absolutely FREEZING and I have basically been cuddled up on my couch with blankets for the past few days. However, I do have to start my spring semester next week so I’m trying to mentally and physically prepare myself for leaving my house- lol. Anyways, I have put together a list of my favorite vegan winter items and set-ups that help me cope with the weather and activities. I love the outdoors, so staying cooped up inside my house and indoors is difficult, yet necessary when it is -6 degrees outside. When the weather isn’t brutal, I love to take walks, ski, play with my dogs in the snow, and snowmobile. What are some of your favorite winter activities?

Ok, back to my winter essentials…


Who doesn’t love a hot cup of cocoa on a cold winter day? As a vegan, I found most hot chocolates has milk and other dairy products, but then I found Nib Mor! This hot chocolate is super rich and delicious, and it isn’t too sweet, which I personally love. It is organic, vegan, non GMO, and gluten free! It also only has 3 ingredients, so it’s a win-win! Since it is so rich, I tend to only use half a packet in a cup of unsweetened coconut milk- and it is literally one of my all time favorites! Also, a couple of delicious variations are to mix in some black coffee, or add some cinnamon! Here is a link!

2. Toast & Fruit

Simple, but delicious. I definitely have a sweet tooth, and toast fruit is just always the perfect combo. It’s comforting, but still nutritious! Here are some of my favorite combos:

  • Food for Life Baking Cinnamon Raisin Ezekiel toast with peanut butter, banana, and cinnamon
  • 7 grain sprouted grain toast with coconut oil + salt (tastes like butter) and homemade strawberry rhubarb jam
  • Dave’s killer bread with peanut butter, strawberries or blackberries, and hemp seeds

Who doesn’t love a good chai latte? I love the warm spices of cinnamon and cardamom, but couldn’t find a chai drink without milk in it! So, Bigelow tea came to the rescue. They make a chai black tea, which is vanilla flavored, and is DELICIOUS. I love drinking it on it’s own, but I also decided to make a chai latte, which was INCREDIBLE! Ps. – how cute is this mug?

Here’s my recipe!


1 Bigelow Vanilla Chai black tea bag (link here)

1 cup So Delicious unsweetened coconut milk (link here)

1 Tablespoon maple syrup

Vegan whipped cream to top

cinnamon for garnish


  1. Heat milk in a saucepan
  2. once hot, steep tea into milk for 5-6 minutes, more or less depending how much chai flavor you want
  3. stir in maple syrup, adding more or less to taste
  4. pour into a mug, top with whipped cream and cinnamon, and ENJOY!

Chopin’s Etude in E Major

I know this is not a vegan-related item but I am definitely a classical music fan and this piece just sets the mood of winter, warmth, and love. It is a very passionate piece and it a perfect calming melody for those cold winter days! Another plus is it is not crazy long…(I know some classical pieces can go on for hours), its only 5 minutes or so! Give it a listen here!

Apple crisp, apple pie, all things apple

Who else loves apple everything? while I know it is kind of an autumn weather food, I love crisp, crunchy tart but sweet apples in the winter too! They remind me of crunching snow, and baked apple desserts are so warm and cozy. My favorite apples are pink lady, granny smith, and macoun. What are yours?

Ripple Food’s Pea Milk

I recently found this product, probably 4 or 5 months ago, and absolutely LOVE it! This plant milk is everything- vegan, non-GMO, gluten free, soy free, lactose free, and nut free! It is super creamy and the perfect addition for any vegan creamy soup, smoothie, nicecream, or even a drink like hot cocoa. I would definitely give this product a try, it is the perfect rich creamy flavor for winter! Here is a link.
