Homemade Vegan Granola 2 Ways || Just A Veg

Hello Everyone!

With the busy holiday season and excitement of December comes buying or making gifts for your family, besties, friends, and co-workers. Quite honestly, I think the amount of spending we do for one day of the year is quite ridiculous, but also love giving gifts!

Personally, I think homemade food is one of the best gift because not only is it practical and will be used, but also is nice because you know the person giving it put time and effort into making you something delicious. These two homemade granola recipes are perfect for pretty much anyone- I mean- who doesn’t love granola? Plus, these granolas are super nutrient dense and refined sugar free!


So you should definitely make these two recipes for the holidays (or as a gift to yourself haha). They are super easy but definitely delicious!

Recipe 1- Cranberry Pumpkin Seed Granola


With hints of coconut and maple, this granola screams cozy. Filled with healthy fat like hemp seeds gives and extra Omega-3 boost and keeps you full! It goes perfectly with almost anything- my personal favorite is with almond milk 🙂

Makes 16 servings

1 serving – 1/4 cup


2 cups rolled oats

1/2 cup unsweetened coconut flakes

1/4 cup dried cranberries

1/4 cup pumpkin seeds

1/4 cup hemp hearts

2 tsp cinnamon

1tsp salt

cardamom, cloves, and nutmeg to taste

2 Tbsp coconut oil

3 Tbsp maple syrup



  1. Preheat your oven to 300 degrees Fahrenheit
  2. Mix all of the dry ingredients in a large bowl (oats, dried fruit, seeds, spices)
  3. In a separate bowl, melt coconut oil and mix in maple syrup
  4. pour the wet mix over the dry mix and mix it all up (said mix too many times :))
  5. Spread the mix on a lined baking sheet and bake for 30-35 minutes, or until golden brown at the top. You can test to see if its done by taking a piece out of the oven. If it hardens when it cools, it is done!
  6. Let it cool, pack it up in a cute mason jar and enjoy!

Ps- it’s only 140 cals per 1/4 cup serving 🙂



Recipe 2- Chocolate Peanut Butter Granola

I haven’t ever seen a food with this combo that’s not delicious. I mean, choco and pb were just destined from the beginning of time. This granola is still super healthy (oil free!) and is loaded with chia seeds for extra nutrition, healthy fat, and to keep you full. It can definitely be eaten for dessert (or breakfast :)) for a chocolate fix without feeling sluggish.


Makes 16 servings

1 serving -1/4 cup


3 cups rolled oats

1/2 cup chia seeds

1.5 Tbsp cacao powder

1 tsp salt

1 Tbspn cinnamon

1/2 + 1 Tbsp smooth peanut butter

1/3 cup maple syrup

1 teaspoon vanilla extract



  1. Preheat your oven to 325 degreed Fahrenheit
  2. Mix your dry ingredients in a large bowl (oats, chia seeds, cacao, salt, cinnamon)
  3. Melt your peanut butter and maple syrup on medium low heat.
  4. Once melty and smooth, remove from heat and add vanilla
  5. Pour the wet mix over the dry mix and stir it up until even coated
  6. Spread mix on a baking sheet lined with parchement paper
  7. Bake for 25-35 minutes, stirring once halfway through.
  8. Let cool and gift or enjoy!

Ps- its again only 140 cals per 1/4 cup serving!
