Salad…for breakfast?
You might think I’m crazy, but wait until you check this recipe out. Breakfast salads are absolutely delicious, extra filling, a great way to get your greens in, and overall super balanced! Not to mention, mixing breakfast foods with salad just makes the salad go from 0-100 reeeeaaal quick.
Studies have shown that eating a savory breakfast is actually more satisfying and will keep hunger at bay for longer that something sweet. So, this ‘salad’ will keep you full all the way till lunch! It’s packed with protein, healthy fats, and a good chunk of greens 🙂
I won’t spend too much time blabbering, as the recipe is the MOST IMPORTANT thing here!
Are you ready?
Easy Breakfast Salad

Serves: 1
Total time: 10 minutes
Ingredients:
2-3 cups your favorite greens (I’m using a spring mix)
1/2 avocado
1/3 cup cherry tomatoes
2 eggs
1 teaspoon coconut oil
2 slices toast (I am using Three Bakers Gluten Free Bread)
Dressing:
3 Tablespoons olive oil
2 Tablespoons white balsamic vinegar
1 teaspoon honey
1/2 teaspoon parsley
salt and pepper to taste
Directions:
- Toast your toast!
- Meanwhile, melt the coconut oil in a pan. Add your 2 eggs and cook however you like (I prefer sunny-side up)
- To make the dressing, simply combine all of the dressing ingredients.
- Begin assembling your salad: greens, eggs, avocado, tomato, and dressing.
- Serve with toast and enjoy!
Yes, that’s really all there is to it! It is so easy, and tastes insanely delicious!
