Roasted Broccoli and Cauliflower Salad (Vegan, GF, DF) // Just A Ve

Hello Hello!

Sorry for the late blog post this week- the world has taken a crazy turn! My university has closed for the semester and all classes are online, and I have been home all day everyday! Hopefully with the extra time I will be able to crank out some cool new content for you all!

Obviously, at this time, health has become a main concern with the COVID-19 virus. Other than being sanitary and keeping your hands and home clean, eating healthy is one of the most important factors to maintaining your health! That means eating as many fruits and veggies as possible, limiting sugar, and eating gut-friendly foods. The better you take care of your body, the better your body will take care of bad bacteria and viruses!

Some key fruits and veggies to help fend off any sickness include the following:

  • oranges– eat ALL the vitamin C you can! Vit.C is super important for immunity and preventing sickness!
  • greens the phytonutrients in leafy greens, broccoli, and other green veg can help build up the immune system!
  • berries– berries are chock full of antioxidants, we will help prevent cell damage caused by environmental and other pressures (something many people are experiencing right now!)
  •  herbal  and green tea– teas have so many health benefits, and herbal and green teas are powerhouses to cleanse your body and heal anything that is awry. Adding 1-2 cups of herbal or green tea to your day to keep a constant cleanse going!

Today, I am going to share a delicious salad recipe that is full of green veggies, protein, and healthy fat that is a great immune booster! This broccoli-cauliflower salad is not only super good for you, it is also super easy to digest! Raw veggies can be harder for your body to digest because of their extremely high fiber content, especially broccoli. By cooking the veggies, you still get the nutrients without the bloat!

This dish is really good hot or cold, and it works as a main meal or side dish! If you make it a main meal it would be delicious with some grilled chicken for some added protein!

Broccoli Cauliflower Salad (Vegan, GF, DF)

Prep Time: 10 minutes

Cook Time: 20-25 minutes

Total Time: 45 minutes

Serves: 4-5

 

Ingredients:

Broccoli:

3 cups broccoli, cut into bite sized pieces

1/4 cup avocado oil

2 Tablespoons minced garlic

1 Tablespoon no-salt seasoning

salt and pepper to taste

 

Cauliflower:

3 cups cauliflower, cut into bite sized pieces

1/4 cup avocado oil

2 Tablespoons minced garlic

1 Tablespoon parsley

2 teaspoons thyme

1 teaspoon cumin

salt and pepper

 

Chickpeas:

1 cup chickpeas, strained

2 Tablespoons avocado oil

pinch of cayenne

salt and pepper

 

Tahini Dressing:

1/2 cup tahini

1/2 cup water

2 Tablespoons lemon juice

2 dates

salt and pepper

 

I know, it looks like a lot of ingredients. But most of them are repeats! I just separated it to make each part easier to make.

Directions:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. In separate bowls, combine each set of ingredients: the broccoli, cauliflower, and chickpeas.
  3.  Spread the ingredients out on baking sheets. Place in the oven and bake for 20-25 minutes, mixing/flipping halfway through.IMG_6715
  4.  Meanwhile, prepare the dressing. Add all ingredients to a blender or Ninja and blend until smooth. the dressing should be thick and creamy!
  5.  Once the veggies are done, combine them in a large bowl. Drizzle with the dressing and serve immediately, or keep separate, let cool, and serve later!
  6. Enjoy!
