French Toast Baked Oatmeal

Welcome back to the new and improved blog!

When the whole world went into lockdown, I felt like my energy was not matching the vibe of my old blog, Just A Veg. While this title and name served me well when I was a passionate vegan, I can say with confidence that my priorities have shifted away from food and recipe creating and more into healthy living in all areas of life, not just my diet. My personal nutrition habits have changed a lot (I will delve into this in a later post), so I did not want to portray myself as a vegan or be misleading in any way!

It is ironic that I am shifting my blog focus but I am jumping back into my posts with a recipe! Well, it did seem fitting as the weather has been getting dramatically colder and cozier foods are on the radar. I love smoothies but when I wake up cold in the morning, drinking something cold is the last thing on my mind.

This French Toast Baked Oatmeal is the perfect balance of light and cozy, leaving you feeling nice and satisfied without feeling weighed down. I love breakfast, but I definitely cannot eat heavy in the morning, so something Iike this is perfect for me!

This recipe is also great to meal prep- it will save for 3-4 days after you make it, then you can just heat it up (or eat it cold) for the next few days! This is a game changer for me as a busy student, I need those easy and quick meals!

Alright, well I guess that is enough advertisement for the recipe! It is truly delicious, and definitely nourishing!

French Toast Baked Oatmeal with Caramelized Bananas

Ingredients

2 cups rolled oats

1/3 cup flax seed meal

1/4 cup hemp seeds

2 tablespoons chia seeds

1 tablespoon cinnamon

1 teaspoon nutmeg

2 eggs

1 cup almond milk

1/4 cup maple syrup

1 teaspoon vanilla extract

For the carmelized banana:

1 banana

1 tablespoon vegan butter

cinnamon

salt (to taste)

Directions:

  1. Preheat your oven to 350 degrees
  2. Combine all ingredients, it should look like very soupy oatmeal
  3. Grease a 9×9 pan with coconut oil or vegan butter
  4. Pour the oatmeal into the pan and bake for 25-30 minutes or until you can stick a tooth pick in the oatmeal and it comes out clean.
  5. While the oatmeal is cooking, heat a pan on medium heat with the vegan butter. Add your banana, cinnamon, and salt. Let cook for 1-2 minutes or until browned. Flip bananas and cook for another 1-2 minutes.
  6. Serve the oatmeal with bananas and milk (if you would like)!

This recipe is delicious and simple, you can top it with whatever you would top your french toast with!
