Healthy(ish) Peanut Butter Cookie Bars!

Hello!

Today I wanted to share another form of cookie (haha), complete with my two favorite ingredients: chocolate and peanut butter!

I definitely feel that as the colder weather approaches, my passion for baking skyrockets! This recipe was just an experiment but it was honestly so good that I needed to share it!!

The best parts about this recipe are that it is beyond easy, only one bowl, and semi-healthy (there just some coconut sugar)! They are gluten free, dairy free, refined sugar free, and dang delicious. Perfectly gooey, nutty, and all without the sugary, processed ingredients!

So, without further ado, here’s the recipe!!

Healthy(ish) Peanut Butter Cookie Bars!

Ingredients:

1 cup nut butter (any kind will work! I like the taste of pb but if you prefer almond or cashew, they will also work!)

1 egg

2/3 cup almond milk

1 teaspoon vanilla extract

1 cup cassava flour

1 cup coconut sugar

1/2 cup rolled oats

1 teaspoon baking powder

salt

1/3 cup mini vegan chocolate chips (I like the EnjoyLife foods brand!)

Instructions:

  1. Preheat your oven to 350 degrees
  2. Combine nut butter, egg, almond milk, and vanilla extract in a large bowl
  3. Add flour, sugar, oats, baking powder, and salt. It should form a very sticky, thick batter. Once combined, fold in chocolate chips
  4. Line an 8×8 pan with parchment paper. Bake the bars for 30-40 minutes or until the top looks browned and crispy along the edges.
  5. Let cool and enjoy!
